The reason Sheldon never mentioned Tam is because he didn't have a friend called Tam as a child. He had no friends. Thats the character... but they are tying in the sequel. Annoying!

In this episode they try to tie in Young Sheldon, by adding a BF even though we know Sheldon never had such a freind. Not sure that I'm ganna go for this one as I don't think of Young Sheldon as a true portrayal of the character. It just recons way too much for my taste and I haven't watched it.

Let's posit that CBS is so desperate to continue getting TBBT/Young Sheldon-style ratings they add more spinoffs featuring the current cast (excepting, of course, Jim Parsons who just says "Thank you but no." What would those spinoffs look like?
