There is a BBT cast answers your questions. I believe it was for the Season 3 DVDs. In it both Jim and Johnny talk about that each of their characters wanted to have the other ones moms while growing up so instead of finding a girl that reminded them of their moms (which most boys do) they would find someone who reminded them of the mom they wanted (Leonard/Mary and Sheldon/Beverly).
All I can say about this is
1. Epic fail with Amy. That might have been the character she was introduced as in season 4, but people disliked her so much she was rewritten to be the even more unlikable character she is today (they should have just canned the character and added another character).
2. Since I can't figure out how rewriting these characters to be less of the people they were introduced as to make these relationships "work" is funny, the show has become more of a "be careful what you wish for" cautionary black comedic farce. (That unfortunately isn't very funny)

“There are no scenes more fun to do, I feel like, than the ones between Sheldon and Penny. They are such a wonderful odd couple.” - Jim Parsons
